The blood cockle has red meat as blood’s color and very nutritious. Blood cockles living in brackish water is the best ones because it is a favorable environment for blood cockles’ growth; therefore, its meat is more tasty and fragrant than one living in other water. People process blood cockles into different dishes: fried blood cockles with lemongrass and chili, grilled blood cockles, blood cockle congee, etc. but to keep all nutritious values, people usually quickly pour hot water into blood cockles.

The stage of scalding out is very important because it shows the ingenuity and experience. If we scald blood cockles out for too long, their shells will be opened which is not appetite, loss nutritional value and aesthetics. To make the dish delicious, the chef will add pounded lemongrass into pot, then boil water, and then pour blood cockles into (water must cover all blood cockles) until seeing air bubbles rising. After scalding out, we remove blood cockles from water and arrange them on dish. The dish is most delicious when it is served with beer.
